How it Works


 

Traeger Grills use all natural wood pellets which are poured into the hopper. When you push the "On" switch, the hot rod activates for  about 4 minutes, igniting the pellets in the firepot. The auger automatically feeds pellets from the hopper to the firepot where convection air is added, acting like a miniature forge. Heat and wood smoke surround the food, resulting in fantastic taste. Drippings are channeled out of the cooking chamber into an external bucket for easy disposal. Flipping the three-position switch to "High" allows you to grill. On "Medium" you can slow cook. The "Smoke" setting allows you to hot-smoke food. In the "Smoke Mode", the grill delivers an even smoke to your food without having to tend the fire. How do I increase the smoked flavor in my meat?: To penetrate your meat with the most smoky flavor and get a deeper, prize-winning pinkish smoke ring, allow the meat to warm up after taking it out of refrigeration. This will allow the meat fibers to open and smoke will be able to penetrate more deeply into the meat. You may also want to cook your meat or poultry the day before serving, refrigerating it overnight. This "sets" the smoke into the meat. The next day, warm it up on the grill by using the "Smoke" setting.

Does it get hot enough to sear a steak?: Searing is done at a temperature between 300 to 500 degrees and it is the result of the "Maillard reaction", which occurs when sugars and amino acids are heated together. When meat is cooked in this temperature range, the outside reaches a higher temperature than the inside, triggering the Maillard reaction and creating the strongest flavors on the brown, slightly crusty surface. This also helps to seal in moisture. Here's how to sear: Run your grill on HIGH for about 15 minutes, then place the meat on the hot cooking surface; you'll hear the sizzle. You can then continue to grill the steak as you would with any other grill, or you can also lower the temperature to medium or smoke to lay a wonderful smoky flavor on the meat and ensure even cooking and uniform color on thicker cuts.

Are searing and charring the same thing?: It is important to not get these two terms confused. Charring occurs when meat is cooked at more than 500 degrees, or allowed to cook too long. When meat is charred, its surface is broken down and carbonized. Charred meat can raise the risk of cancer; excessively charred meat is to be avoided.

How long does a bag of pellets last?: You can get up to 30 hours of cooking time with each 20 pound bag of pellets, that's equal to at least 10 cookouts. On Smoke setting (180 degrees) you will use about two-thirds of a pound per hour. On Medium (300 degrees) you will use about 1 pound per hour. And on High setting (425 degrees) you will use about 2 pounds per hour.

My smoke setting is running too hot...How do I get it to run at a lower temperature?: The newer Digital Controllers come with an adjustable "P" (or pause) setting. This will allow you to adjust your Smoke temperature up or down. The default setting "P-2" means the auger feeds pellets for 15 seconds, and rests (or pauses) for 45 seconds. The next level "P-3" means the auger feeds pellets for 15 seconds, and rests for 55 seconds, and so on, pausing an additional 10 seconds each "P" level all the way up to "P-9". To adjust your "P" setting, stick the end of a paperclip into the small hole located on the upper right of your Digital Controller and hold for a couple of seconds. Release the paper clip and the "P" setting will appear. Then reinsert the paperclip and keep pushing until you get to the desired "P" setting. Be careful to not set your "P" setting too high or your fire will go out and will leave you with a mound of pellets in your firepot.

Can I leave my Traeger Grill unattended?: Yes, that's what's so great about these grills. It's not your typical "get up in the middle of the night" smoker. If you fill your hopper full of pellets, you can smoke for hours without watching and waiting. At 10pm at night, you can set your Traeger on "Smoke", put a brisket on, fill up the hopper with pellets, go to sleep, and wake up the next morning to finish cooking your brisket.

Can I use any hardwood pellet for my Traeger Grill?:No, only use Traeger hardwood barbecue pellets in your Traeger Grill. These are especially manufactured for these grills. They are 100% natural foodgrade wood. Any other pellets might contain resin that would ruin the taste of the food. Be sure to keep your pellets in a dry area. If they are exposed to moisture, they will turn mushy and cause your auger to jam.
